Pork Meatballs

Sure, I’m bias if you ask me if ground pork makes delicious meatballs. We’ve raised our own pasture-raised pigs, and provided pork shares for many families here in New Hampshire, for many years, so meatballs made with pork are our favorite.

But you don’t have to take just my word for it. After sharing this recipe in a podcast episode, I heard from Wendy, on instagram.

Recipe for Pork Meatballs

 

INGREDIENTS

6 pounds ground pork

24-36 garlic cloves (3 smaller garlic heads)

2 cups bread crumbs

6 eggs

1 1/2 cups nutritional yeast (or parmesan cheese)

2 tsp garlic salt

2 tsp salt

1 1/4 tsp pepper

1 tsp red pepper flakes (I prefer 3. Bill prefers 1)

3 tsp basil

3 tsp oregano

 

DIRECTIONS

Mix all ingredients, using your hands, in a large stainless steel bowl.

Heat a large cast iron skillet and grease it well (I use bacon grease).

Brown meatballs on all sides.

If you’re eating them right away, turn skillet heat down to medium and cover. Cook for about 10 minutes, depending on the size of your meatballs.

If you will be freezing the meatballs, after they are brown on all sides place them on ungreased cookie trays and cook them in a 400-degree oven for 15 minutes.

 

Makes 125 large- to average-sized meatballs.

Notes about making meatballs with pork:

  • Yes, you can certainly use this recipe with any ground meat, ground pork just happens to be our favorite.
  • Feel free to tweak the spices to make these just the way your family likes them. (Or make two batches, if you have a family member like I do who likes the less-spicy version.)
  • Feel free to make this large batch of meatballs when you plan to have them for dinner anyway, then freeze the excess, so future dinners are super easy.
