What was maple syrup originally used for?
I explain in my book, Sweet Maple, that refined sugar, like we know it today is not the way sugar is supposed to be. And it’s definitely not the way it originally was. Instead, native americas relied on maple sugar as their primary sweetener, made from the sap of maple trees. They would use maple sugar to sweeten their food and their drinks, and because it required no refrigeration it was easy to use and transport.
