You’ll hear many folks say “use hard white for bread and soft white for everything else,” while that’s not bad advice, I’d personally send you to these two grains, instead of ultrahybridized modern wheat. 

For Breads: this hard white heritage grain will be a great place to start

For Baking: this is an ancient grain that is the closest to acting like all-purpose flour.

 

Why do I use Heritage Grains?

Because they haven’t been bred and altered, heritage grains offer us more nutrients, including more antioxidants, than our modern grains. Heritage grains are found to have higher levels of other nutrients as well, especially protein, fat, fiber, and minerals. And heritage grains have less protein content, which means they have less gluten potential, which means if you have trouble eating breads, homemade bread made with fresh milled heritage grains might make all the difference for you.

This family grows my all-time favorite heritage grain for bread baking: Rouge de Bordeaux

This amazing old heritage grain was all but lost until committed farmers, like those at Guardian Grains, revived it. This amazing grain makes the best bread flour, and my bread smells like baking spices and cinnamon as it bakes… no wonder French pastry chefs of the early 1800s prized this flour!
