										<content:encoded><![CDATA[<p>With Easter only days away, I was elated to discover this new use for my kombucha starter tea. If you don&#8217;t have kombucha starter tea sitting around, that&#8217;s okay; I explain how to dye these rustic, eye-catching eggs with things you surely <em>do</em> have in your kitchen today.</p>

<p><span id="more-14761"></span>I only have homegrown eggs, which are gorgeous of their own accord. But their darker hue does make colored dyes pretty difficult.</p>
<p>But dyeing eggs is a tradition in this house that my momma started long ago and one that, I hope, will be a fun little part of every Easter, no matter my age.</p>
<p>Since most of our layers this Easter are Cuckoo Maran, that means most of my eggs are an earthy spotted hue. Until this spring, I&#8217;ve always had a wide array of egg sizes and colors, between the many breeds of chicken and the ducks. My natural-dyed eggs always turned out gorgeous. Here&#8217;s a picture I took of my daily allotment of eggs a few years back&#8230;</p>

<p>And <a href="https://soulyrested.com/all-natural-easter-eggs/">the Easter eggs I dyed that year</a> were very colorful&#8211;sage, periwinkle, and deep orange. I give you full directions for those <a href="https://soulyrested.com/all-natural-easter-eggs/">over in this post.</a></p>
<p>But alas we had a hen-house tragedy last fall&#8211;I explained in the facebook live at the end of this post, if you wanna hear the story&#8211;and we now have almost all Marans. I have to say I do adore the hens. They&#8217;re a very friendly, sweet temperament to each other and to anyone who wants to pet them.</p>
<p>Yes, we pet our chicken.</p>
<p>And we hand-pick snacks for them. But I digress.</p>
<p>My point was simply that  our Maran eggs are not the best for Easter dyeing.</p>

<p>Because it&#8217;s an important part of our family&#8217;s Easter tradition<em>, not</em> dyeing eggs was <em>not</em> an option. Because my 9 hens leave me with more than a dozen eggs every other day, buying bleached white eggs from the store was out of the question in this practical girl&#8217;s mind.</p>
<p>So I set up a few of my favorite natural dyes for eggs, boiled a dozen brown eggs, grabbed a few white crayons (to make fun geometric patterns on the eggs before dyeing them) and got out my kombucha starter tea.</p>

<p>Kombucha has served many purposes our our home these days, and I have found I can use my extra starter tea for almost anything that I would use vinegar for, including dyeing Easter eggs.</p>

<h3>The Spinach Didn&#8217;t Work</h3>
<p>For the spinach dye I simply boiled 3-4 cups of water, tossed in a handful of spinach, added 2 tablespoons of kombucha starter tea (feel free to use vinegar) and let that simmer for about 1/2 hour. After soaking a hard-boiled egg in the spinach for hours, the green hue was barely noticable, while the onion skin dye (more on that in a second) was doing fabulous.</p>

<p>Not sure if it was my brown eggs or my refusal to break up the spinach that caused my problem, I pureed the spinach/vinegar water and tried again.</p>

<p>But I was sorely disappointed after a few more hours of egg soaking. So I took the eggs right out of the pureed spinach dye and added them directly to the onion skin dye. After another hour or so of soaking I was pleased with the results. While the green didn&#8217;t show up on my brown eggs, the soaking in pieces of spinach left interesting reside that then mingled with the onion skins for some pretty neat marbling. So I guess I should tell you how to make a dye of onion skins, huh?</p>
<h3>The Onion Skins Made a Perfect Dye</h3>
<p>To make my onion skin &#8220;bath,&#8221; I boiled 4 cups of water, the outer layers off of 4 medium onions, and 2 tablespoons of kombucha stater tea (again, feel free to use vinegar). Once it reached a low boil, I turned it down to simmer for 30 minutes, took the pan off the heat, and added my hard-boiled eggs. I soaked them for a few hours, but could have easily let them soak overnight as well. And of course I could have soaked them for just a few minutes if I had white eggs and wanted a lighter orange tint.</p>

<h3>My Favorite Was a Combo</h3>
<p>When the dozen were done, the ones that had started in the green dye and transferred over to orange were by far my favorite. The two layers, and a little bit of rubbing with an old cloth, made for a pretty marbling look. Added to the crayon markings, it looked rustically Easter, or maybe they just looked like a total mess up. But hey, even mess ups can be pretty, no?</p>

<h3>One Final Detail</h3>
<p>While I love the chalky, matte look, I decided I wanted to fancy the eggs up just a tiny bit with a shiny finish. I put a small drop of oil on a rag and gently rubbed them all over. Then rubbed them again with a clean, dry rag, to get off any excess oil. Voila. I&#8217;m pleased.</p>

<h2>What’s so special about<i> </i>Easter?</h2>
<p>Easter is new life. Literally, Easter is about new life. Easter reminds me every year to begin again. Easter reminds me that no matter how many failures I was involved in this year, or how many deep pains I wallowed in on many dark nights&#8230;<strong> life is renewed. Spring has returned, chicks are hatching in the incubator, grass is again visible for the first time since our first December snow day, and <i>Christ is alive!</i></strong></p>

<h2>What’s so special about <i>this </i>Easter?</h2>
<p><em>This Easter is the first one I’ve celebrated since my daughter’s spinal fusion complications.</em> Her surgery ushered in a set of fears and pains uglier than any I’ve had to hold hands with. I held hands with her ear-piercing pain for a month’s worth of dark evenings. I held hands with her tear-soaked pain when, at some moments, it was her and I fighting against a hospital full of “experts.”</p>
<p>We clung to Christ. We found a clinical trial. Her neurological pathways eventually calmed.</p>
<p><b>And now it is Easter again. A life <i>worth living</i> is renewed. A spring <i>worth celebrating</i> has returned, chicks <i>who will offer us nutritious eggs when the summer begins to wane</i> are in the incubator, grass <i>that houses grub for our birds and grass that will grow tall and feed our cows </i>is again visible for the first time since our first December snow day, and indeed, my friends, with every fiber of my being I am assured that <i>Christ is alive!</i></b></p>

<h2><b><i> </i></b>I just answered the phone.</h2>
<p><em>But this Easter holds another significance for me.</em> Two years ago on April 1st, around 1:00 on that Friday afternoon, I just answered the phone. I stood on the wide plank floors, in my sock feet, half way between my living room couch and my kitchen table, and listened to my mom’s voice.</p>
<p>The words she spoke ushered in a new era of my life. Standing there in my cable sweater and messy bun, surveying the lunch dishes I needed to clean up, I had no idea that the next words I heard would be a conversation I would never forget, one that would open a floodgate of tears, and one that, as hard as it was, I would wish two years later I could hold just one more time.</p>
<p>With each word she uttered after “cancer” my lungs continued to deflate and I found myself unsure if I could refill them.</p>

<p>I wrote about <a href="https://soulyrested.com/repeat-as-needed-paraphrase-often/">mom&#8217;s phone call, on that chilly Friday afternoon</a>, and how God had prepared me.</p>
<p>And while I have yet to write about the heartbreaking summer I spent holding my daughter&#8217;s hand through Complex Regional Pain Syndrome, I did write a little <a href="https://soulyrested.com/beauty-in-the-sorrow/">when she began her battle against chronic pain</a> and I shared the verses that I clung to for hope at that time. And I shared on <a href="https://www.instagram.com/p/CMdeE1sBNQR/" target="_blank" rel="nofollow noopener">this post on instagram</a>.</p>

<p>It&#8217;s been two years after Mom’s call—the call that announced the unwanted intrusion of cancer into my life.</p>
<p>Just weeks after mom&#8217;s death, I found myself in an ambulance, on a dark icy New Years Eve, again having trouble forcing my lungs to work because my heart knew <a href="https://soulyrested.com/what-my-parents-taught-me-about-broken-heart-syndrome/">I was going to have to say goodbye to my Daddy too. </a></p>
<p>After two years of grief, sadness, confusion, and pain, it’s time to celebrate my favorite holiday again. And I, indeed, have much to celebrate.</p>
<p><b>Now it is Easter again. A life <i>worth living</i> is renewed. A spring <i>worth celebrating</i> has returned, chicks <i>who will offer us nutritious eggs when the summer begins to wane</i> are in the incubator, grass that <i>houses grub for our birds and grass that will grow tall and feed our cows</i><i> </i>is again visible for the first time since our initial December snow day, and indeed, my friends, with every fiber of my being I am assured that <i>Christ is alive!</i></b></p>
<p>I step into Easter with a new understanding this year. You see, not only is He alive, but He has declared me as &#8220;qualified.&#8221; He has declared me as a co-heir to all His father&#8217;s goodness.</p>
<h2>What’s it mean to be “qualifed&#8221;?</h2>
<p>I’ve been forced to think about estate things after Dad passed away, leaving me just 1 brief month… just 30 oh-so-short days after <a href="https://soulyrested.com/then-sings-my-soul/">Mom spent her last moments with me</a>… and there I was having to make so many calls. Yet not one lawyer or investor or insurance agent would talk to me. I was one of Charles and Irene’s children. I could tell you stories of their youth. I could describe their favorite flowers. And I could tell you where they bought their orange juice for the past 5 years. Yes, I knew them, and loved them, as much as anyone could. But I wasn’t &#8220;qualified&#8221; to talk about the sale of their home or even to purchase their tombstones without a legal piece of paper drawn up and signed in some cold, unfamiliar lawyer’s office. A piece of paper that said only one child was “qualified.”</p>
<p>I didn’t have that signed document that qualified me. I wasn’t the executor of their estate.</p>
<p>I’ve been drowning in “unqualifed”… with no answers and no resolution after so long… because I’m not &#8220;qualified&#8221;…</p>
<p>But all of my experiences with estates and insurance policies and tombstones sit in drastic opposition to the reality that Easter makes so clear. You see as a a child of God&#8217;s, I am qualified to receive a full inheritance. I can’t fathom the glory of my heavenly Father. I don’t understand how His sovereignty “works.” I can&#8217;t grasp the depth of the trinity or the virgin birth. I don’t understand the immensity of His grace. Or why He would lavish it on <i>me. </i>But yet, despite all that I don’t understand about Him, despite how little I actually know Him, I need no other justification, no paper, no signature, no official meeting, no court date. No, I am “qualified to share in the inheritance.”</p>
<p>Why? <strong>Because He has qualified me.</strong></p>
<p>It’s that simple.</p>
<p>When I try to understand this reality in comparison to my earthly experiences of an estate and my inability to qualify for what<em> is</em> rightfully mine, I am shocked and even more grateful that I have been qualified, of no doing of my own, for so much that is <em>not</em> rightfully mine.</p>
<p>Now it is Easter again. And Christ has made my life worth living. He has gifted us with spring as a reminder that He not only is alive but has qualified us to join in His wonderful inheritance. The slight warmth in the sun&#8217;s rays? The chicks that are hatching? A well-fed, freckle-nosed calf? I just see them as a tiny downpayment of my inheritance.</p>

<p>Eternity as a child of God? Co-heir with Jesus? That&#8217;s an inheritance I can&#8217;t even get my head around. But it&#8217;s mine. Guaranteed. Without any legal paperwork to draw up or attorneys to call. The baby chicks and the new grass for Scout and Selah to dine on, they&#8217;re just sweet little reminders of the inheritance that is to come.</p>

<h2>Another guarantee of Easter?</h2>
<p>No matter how old my daughters are, they will always want to be greeted with an Easter basket on Easter morning. But as they&#8217;ve gotten older, I find I&#8217;m less prepared for Easter. This year was no exception. We increased<a href="http://soulyrested.com/category/maple-syrup/"> our syrup production</a> by quadrupling our number of taps this year, so I&#8217;m collecting sap and boiling and bottling syrup into the wee hours of the morning.</p>
<p>Needless to say, Easter snuck up on me and here I am, a day before, and realize I have to pull together some Easter baskets.</p>
<h2>3 Simple Tips for Last-Minute Easter Baskets</h2>
<p>If you too need to put together a few baskets quickly, here are some pointers to easy Easter basket assembly:</p>
<ol>
<li>If you don&#8217;t have purchased grass for your baskets, it&#8217;s easy to make your own! Just run leftover gift wrap or colored paper scraps through your paper shredder. Crinkle the strips and fill your baskets!</li>
<li>If you&#8217;re short on candy, grab a disposable pastry bag&#8211;or just use a sandwich bag even&#8211;fill it with orange jelly beans, tie it closed with green ribbon, and you have an adorable jelly bean carrot.</li>
<li>And finally, think outside the box (or the basket). Consider something other than candy, such as a tickets to see a movie together, a gift card to their favorite ice cream shop, silly putty (I mean, really, who&#8211;at any age&#8211;doesn&#8217;t like silly putty?), bouncy balls, gardening supplies, trail mix, perfumes, lotions, sunglasses, socks, and card games.</li>
</ol>
<h2>My Simple Tips for Organizing an Easter egg hunt?</h2>
<p>If possible, stock up on eggs and small prizes the year before, at the after-Easter clearance sales.</p>
<p>Always invest in the better-quality eggs, unless you enjoy repackaging the eggs that fall open pre-egg-hunt, again and again.</p>
<p>Be creative with lots of non-candy egg stuffing treasures. Consider these small items:</p>
<ol>
<li style="text-align: left;"><a href="https://amzn.to/38phptH" target="_blank" rel="nofollow noopener">erasers</a>,</li>
<li style="text-align: left;">mini bubbles,</li>
<li style="text-align: left;">small<a href="https://amzn.to/38phptH" target="_blank" rel="nofollow noopener"> balloons</a>,</li>
<li style="text-align: left;">rings (for girls),</li>
<li style="text-align: left;">small hair accessories (for girls),</li>
<li style="text-align: left;">stickers, tattoos, even nickels.</li>

<p>Consider having a prize table and stuffing many eggs with tickets, allowing the child to choose one item off the prize table for each ticket.</p>

<p>Since yet another blizzard hit our New England homestead this week, we have yet to dig all the way out from the foot of snow it dumped on us. Sadly, the continual drop in temperatures means no sap is flowing&#8211;with peak day temps not nearing the necessary 40-degree mark. Without warmer days (alongside freezing nights) no pressure builds up in the trees, the sap is lethargic, and our maple syrup &#8220;operation&#8221; is on hold. In fact, to date, we have only collected enough sap to make eight small jars of maple syrup.</p>
<p>So this week, while we dig out from the snow, watch the mallards stop in at our homestead along their spring migration route, and eagerly wait for warmer daytime temperatures, I&#8217;m putting together a post for you about our reverse osmosis filter&#8211;how to build one and why you would want one for DIY maple syrup production.</p>

<h3>Dying Eggs All-Naturally</h3>
<p>Every year, many weeks before Easter, the hankering starts. My daughters start debating about a new way to do a favorite, old tradition&#8211;Easter egg dying. But to date, by far, our most favorite options have involved all-natural dyes. Thankfully, the hens provide lots of &#8220;canvases&#8221; for us to experiment on. <p><strong><em>How do naturally-dyed eggs point to Christ?</em></strong></p>
<p>Christ’s sacrifice is something very <em>un</em>natural and so undeserved, but through His sacrifice we can have new life. An egg beautifully portrays new life. And in God&#8217;s beautifully designed nature we can find so many ways to make our eggs&#8211;and our lives&#8211;bright and colorful.</p>
<p>There&#8217;s also the wonderful idea that parents love hiding eggs for their children to find, the same way Christ loves &#8220;hiding&#8221; blessings in our days, we just have to look hard sometimes before we see them and recognize that they are blessings indeed.</p>
<h3>Making a Coconut Bunny Cake</h3>
<p>A day or two before Easter, we then have to make THE cake. It was a tradition my mother always carried on with my daughters, a tradition from my own childhood. A tradition of the bunny-shaped coconut cake. If you haven&#8217;t already made one of these for yourself, you&#8217;ll be surprisingly shocked at how easy it is. Simply make 2 round cakes. Use one for the bunny&#8217;s face, then cut the second to form the bunny&#8217;s bowtie and his ears. Icing, cover with coconut, and decorate however your heart desires.</p>
<p><strong><em>How does a bunny-shaped cake point to Christ?</em></strong></p>
<p>When my children were little, I never wanted thoughts of the Easter bunny to take their focus off of Christ&#8217;s sacrifice that is the very reason we celebrate. Yet the bunny was everywhere. I decided to make thoughts of the Easter bunny always point them back to Christ. So I thought them at a very young age that bunnies were very fertile, explaining this meant they gave birth to new babies many times a year and that each time they had lots of babies. (Now that we live on a homestead where we raise bunnies, this idea is, of course, quite obvious.) So bunnies represent new life. Abundant new life.</p>
<p>I would often go on to explain that when we believe in Jesus, we are reborn and have a new life. An abundant new life.</p>

I realized that an average day on a farm&#8211;not unlike Easter Sunday&#8211;can make someone realize God’s provisions and faithfulness in the midst of life’s difficulties and hard work. <p>Now&#8230; on to the article&#8230;</p>
<p>She wanted to try something new this year. She gingerly placed a dozen eggs in the old silver pot and covered them&nbsp;with tap water while talking of Easters past. Recalling that NaNa would always be the one to do this part of the Easter ritual, she decided since we now live&nbsp;400 miles away from her grandparents&nbsp;we would dye the eggs a little differently. She was hoping the newness would soothe the sadness.</p>
<p>So we scrounged around the kitchen gathering what we thought&nbsp;might be fun natural dye material. In the end, we were shockingly&nbsp;pleased with our results.</p>

<p>The red tea leaves turned the eggs a grayish purple and the yellow onion skins made a beautiful pumpkin orange color. The spinach was my favorite, with a beautiful Old World charm to the patina left behind where we had to peel off remnants of spinach.</p>

<p>To dye the eggs,&nbsp;we first boiled the eggs and let them cool to room temperature. Then we boiled each ingredient separately in water and vinegar (no vinegar needed with the tea leaves). The eggs soaked in glasses for many hours, covered by each dyeing solution. The longer they soaked, the more intense the color. For a little fun, we first drew on some of the eggs with a white crayon before dyeing them.</p>
<p>We wanted peach- and pumpkin-colored eggs, so we soaked some in onion skin overnight.</p>

<p>We had fun playing around with the length of soaking time and amount of dyeing ingredients, but here are our general recipes for our all-natural egg dye:</p>
<p><em>Spinach:</em> 1/2 cup chopped spinach, 1 tsp. <a href="https://amzn.to/3dNwysa" target="_blank" rel="nofollow noopener">vinegar</a>, 2-3 cups of water</p>
<p><em>Red Tea Leaves:</em> 2 tablespoons of red tea leaves, 2-3 cups of water. <a href="https://amzn.to/2V3ewJM" target="_blank" rel="nofollow noopener">This rooibos tea</a> is my favorite tea for <a href="https://soulyrested.com/kombucha/">making kombucha</a>, so I always have this on hand.</p>
<p><em>Yellow Onions:</em> skins off of 6 small onions, 1 tsp. vinegar, 2-3 cups of water</p>
<p>We still wish we could spend time with grandparents this Easter weekend, but we were thankful for a new twist to a timeless, treasured tradition. The egg is a perfect reminder of the&nbsp;miracle of our new life&nbsp;in Christ, something to be oh so thankful for every day.</p>
<p>She and I talked about how Christ&#8217;s sacrifice is something very <em>un</em>natural and so undeserved but how very beautifully new life is portrayed in something so simple as an egg and some natural dyes.</p>

<p>Miraculous eggs are befitting symbols of new life, both Christ&#8217;s resurrected life and our new lives in Him. The newest members on our homestead, who arrived just this week&#8211;the bunnies and hens&#8211;have provided great joy and bounteous, fresh eggs this Easter week.</p>

<p>Although we are still surrounded by winter&#8217;s white snowy mantle, our farm is speckled with reminders that indeed spring, and new life, is assured.</p>

<h2>Feeling Blessed</h2>
<p>Feeling so blessed, I think of David&#8217;s prayer in 2 Samuel&#8230;</p>
<p><em>&#8220;How great you are, O Sovereign Lord! There is no one like you.&#8221;</em></p>
<p>The beauty of the first Easter&#8211;the amazing uniqueness of Christ&#8211;is spellbinding. So I&#8217;m thankful there are endless, delightful ways to celebrate our risen Lord with children of all ages. Our daughters adore our family&#8217;s numerous Easter traditions that we have honored since they were toddlers, and this year they wanted to see one of their favorite in action in our new, small town, at our old, small church. So they have been busy for weeks orchestrating an Easter egg hunt. Painting a sign announcing the fun&#8230;</p>

<p>Scouring stores for the best priced plastic eggs and mini marvels with which to fill them&#8230; Cutting out paper eggs that hundreds of little hands will fashion into bright spring wreaths this Saturday&#8230;</p>

<p>Personally, I&#8217;ve been thankful for the rewarding diversions, which have kept me from dwelling on my twinge of sadness. My oldest isn&#8217;t going to be home on Easter Sunday. This will be the first Easter this momma can&#8217;t fill a basket for each of my four daughters and sit down by my husband, hugging my mug of warm tea, watching them all inspect every treasure.</p>
<h2>When Children Take on Special Traditions as Their Own</h2>
<p>So it gave me joy all the way down to my fuzzy socks (yes, it will be a chilly Easter in New England this year) to see another daughter taking on the duty of one particular tradition herself. She was already setting the large, metal mixing bowl on the counter and gingerly counting the eggs out when she announced, &#8220;Mom, we&#8217;re making Resurrection Cookies tonight.&#8221; Their sweet meringue goodness and the thoughtful reading that accompanies the mixing make for absolutely perfect, sweet &#8220;Easter cookies.&#8221;</p>
<p>And yes, my 17, 14, and 12 year old read all the passages and completed each step (right down to taping up the oven door), because, well, it wouldn&#8217;t feel like Easter in our house without these cookies.</p>

<p>This first Easter on our New England homestead, the first Easter I have spent outside of my own native state, and the first Easter I will spend without my eldest by my side, I am abiding in the greatness and uniqueness of the Lord. I am rejoicing that my daughters are helping young neighbors celebrate God&#8217;s goodness. I am resting comfortably in the eldest&#8217;s zeal to spend the holiday with friends on campus and help at her own church&#8217;s festivities.</p>

<p><span style="line-height: 1.5;">Preheat oven to 300 degrees. Let each child smell the vinegar. Put 1 tsp. vinegar into mixing bowl. Explain that when Jesus was thirsty on the cross he was given vinegar to drink. Read John 19: 28-30</span></p>

<p>Add egg whites to the vinegar. (Be extra cautious that not even a small drop of yolk is allowed into the bowl.) Explain that eggs represent life, and Jesus gave his life so we could have new life. Read John 10:10-11.</p>

<p>Sprinkle a little salt into each child’s hand. Let them taste it and brush the rest into the bowl. Explain that this represents the salty tears shed by Jesus&#8217; followers. It also is a reminder of the bitterness of our own sin, which might “taste” good to us when we’re doing the wrong thing, but will always have a bitter result.</p>

<p>So far the ingredients are not very appetizing. Add 1 c. sugar. Explain that the sweetest part of the story is that Jesus died because He loves us. He longs for us to know Him and belong to Him. Read Psalm 34:8 and John 3:1-3</p>

<p>Beat with mixer on high speed for 12 to 15 minutes until stiff peaks are formed. Explain that the color white represents how God sees those whose sins have been cleansed by Jesus. Read Isaiah 1:18 and John 3:1-3. At this point, our whole family always eagerly gets PJs on, so everyone is ready to tape up the oven before heading to bed for the night.</p>

<p>Drop meringue by teaspoons onto a<a href="https://amzn.to/2X6vKZm" target="_blank" rel="nofollow noopener"> parchment paper</a>-covered <a href="https://amzn.to/2Xa1QDF" target="_blank" rel="nofollow noopener">cookie tray.</a> Explain that each mound represents the tomb where Jesus&#8217; body was laid. Read Matthew 27: 57-60.</p>

<p>Put the cookie sheet in the oven, close the door and turn the oven OFF. (DO NOT bake the cookies!) Give each child a piece of tape and seal the oven door. Explain that Jesus&#8217; tomb was sealed. Read Matthew 27: 65-66.</p>

<p>Talk about the intense despair the disciples must have felt when the tomb was sealed and they thought they would never again see their friend and Lord. Read John 16:20 and 22. Then go to bed.</p>

<p>On Easter morning, open the oven and enjoy! Notice the cracked surface and the hollow insides. On the first Easter morning Jesus&#8217; followers were amazed to find the tomb open and empty. Read Matthew 28: 1-9.</p>
