fresh milled sourdough discard crackers
addictingly flavorful and crispy, these crackers also happen to be easy to make & nutritious.
Servings: 1 large tray
- 1 cup sourdough starter discard
- 2 tablespoons einkorn flour
- ¼ cup grated cheese
- 2 tablespoons liquid oil
- seasonings/herbs if desired
Mix all ingredients together in a large bowl. Spread the dough out in a thin layer on a baking tray, lined with parchment paper, pulling a spatula from the center of the dough out to the edges, making sure the middle isn’t thicker than the edges. Bake at 325 for 8 minutes.
Remove the tray from the oven and score your crackers with a knife or a pizza cutter and then return them to the oven. Continue to check crackers every 5-8 minutes, removing any crackers that are more golden and feel done. All the crackers should be done after a total of 20-25 minutes. Don’t overcook, but err on the side of slightly soft. If they’re nice and thin, they will harden as little as they cool. Let crackers cool on a cooling rack and enjoy.
