fresh milled einkorn chocolate chip cookies

Ingredients

  • ¾ cup butter
  • 1 cup coconut sugar or sub brown sugar
  • ½ cup organic cane sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 2 cups fresh milled einkorn flour
  • 2 teaspoons chickpea flour fine and sifted, optional
  • ½ teaspoon baking soda
  • 1 ½ cups chocolate chips

Instructions

  • First make your brown butter; in a saucepan over medium/high heat, melt the butter and continue to cook it, stirring frequently, until it foams and you start to see browned bits on the bottom of the pan.
  • Pour into a cooled bowl and set it aside to cool down some. Ideally, let it cool until it’s firm.
  • Preheat your oven to 350 degrees.
  • Beat the cooled butter in a stand mixer with the sugars until it all lightens in color and thickens slightly (2-3 minutes).
  • Add in the vanilla and eggs, and mix until combined.
  • Add in the dry ingredients, adding in the chocolate chips once the dough is the desired texture.
  • Form the dough into balls and place on a tray, leaving room for them to spread slightly..
  • Bake in your hot oven for 10-12 minutes, until edges are slightly brown.
  • Cool cookies on the tray for a few minutes after removing from the oven, then move them to a cooking rack. Enjoy!
