If you do a new price comparison can you please utilize weight only.  As flour is compressible volume is poor choice of measurement.  Additionally, most serious baking is done using only measurements of mass for that very reason.]]></description>

I see in your comments you&#039;re looking to review and revise this article (it&#039;s ok that the math wasn&#039;t mathing, it was still helpful). I live in California and thought I could give some insight on the costs here. I don&#039;t know east coast costs (especially with new minimum wages).
I just started making my own sourdough. I am interested in buying a mill at some point, but unfortunately I will probably never reach a cost benefit. It will always be a deficit if I&#039;m to look at the financial perspective.
I buy organic all purpose at a Costco- 20lbs for $17. The Azure does have a local drop and so for the best price/lb getting the 50 lb for $64 is the choice. This means, looking at price per ounce the comparison would be:
5.3¢/oz Costco all purpose 
8¢/oz Azure brand (free drop location).
These are 2 entirely different types of flour too not to mention the nutrient benefit.
Overall, I&#039;m not sad with that choice, plus like you said I&#039;m sure I wouldn&#039;t be using only fresh milled esp. in the beginning until I have a better handle on how the flour holds.
