Trying this recipe today, but I’m wondering if your weight measurements are accurate? One cup of flour weighs 145g, but the recipe asks for 2c, 145g…. Im going by cups today, will adjust and add more flour or liquid if needed!

Hi Lori, I prefer to mill my own flour, but if you’re purchasing pre-milled flour, I’d stick with either the sprouted or the unifine. Ultra-fine is just more powdery and processed. Your regular stand-mixer will work fine for kneading.

For the spelt flour is it the ultra-unifine, the sprouted or the unifine?
For the hard red flour, is it the sprouted or the red Fife sprouted or the bread flour 100% whole red wheat (unifine)?

Also, until I invest in the mixer, is it OK to use my regular stand mixer?
