Hi Lori, I prefer to mill my own flour, but if you&#039;re purchasing pre-milled flour, I&#039;d stick with either the sprouted or the unifine. Ultra-fine is just more powdery and processed. Your regular stand-mixer will work fine for kneading.]]></description>

For the spelt flour is it the ultra-unifine, the sprouted or the unifine?
For the hard red flour, is it the sprouted or the red Fife sprouted or the bread flour 100% whole red wheat (unifine)?

Also, until I invest in the mixer, is it OK to use my regular stand mixer?
