In reply to Donna. Hi Donna, I used lemon juice instead of vinegar. Officially it can still be called "vinaigrette" since the tart lemon juice mimics vinegar.

Why do you call this a vinaigrette when there is no vinegar in it? I thought that was part of the definition of a vinaigrette… or did you forget to list that ingredient in the recipe?

In reply to Chandra. No, avacado oil is a healthy oil. It's pressed from the flesh of the avocado fruit, not the seed or skin.

In reply to Julie. Great question. I imagine there is an "official" answer to this, but all I can tell you is I personally have never had any homemade salad dressing go bad, and I've kept them for many long months in the fridge.

How long does homemade dressing last in the fridge. I usually just make enough for a salad recipe and only have a little leftover.
