also, i should have told you, feel free to tweak the amount of flour and baking powder (maybe you need a little more of one or both ff is so finicky and altered by your climate)

I don’t find it necessary to let my cookie dough sit when made with fresh milled flour. But if you’re finding that your dough is too sticky or you don’t love the texture of your cookies, you could give it a try. Congrats on getting a grain mill! Which one did you decide to order?

Is it only when making bread with freshly milled flour that you have to let it rest to absorb liquid? Or would it be a good idea in this recipe, too? Thanks! (Brand new to freshly milled flour – got my mill yesterday!)
