I dry the starch by spreading it on a cookie sheet it dries in a few hours (do not heat) and scrape it up, store in the freezer it does not last like commercial starch. Search for “high protein chickpea tofu” Mary’s Test Kitchen has the recipe I used.

Technically, yes. But I would personally be concerned about the moisture levels being just right so you don’t damage your mill!
