					<description><![CDATA[you talk about baking with lard.  Are you talking about Leaf lard, or back fat lard?  I make pastries with Leaf lard, &#038; have contemplated using lard in place of butter... but have not pulled the trigger as I&#039;m too cautious.  
My processor did NOT separate the Leaf and back fat when they processed our pigs.  I guess after I render it, I need to get out of my comfort zone and try baking a bunch of different things!
