First time tapper here. We have tapped 12 sugar maples on our property. They are flowing nicely. Can we collect the syrup and save it till we have a full five gallon bucket to process. Can we store it in the frig or freeze it? We are doing this with our 11 grandchildren, we have lots of questions. Read your entire post, thank for all the direction.

After the first boil out side we brought the sap in house in a large SS pot….filtered the sap n put on the stove on hi. It never came to a full boil…the temp actually dropped n never cam up again to the hi point of 212. we changed to a slightly smaller pot we borrowed from our neighbor. Which worked fine on our first boil. Our pot is also a stove top canner pot. First time using. We now poured the smaller amount into the neighbors pot…. Wondering why ours never boiled??

Thank you, thank you…. I was thinking about the ice in my buckets and wondering if removing it would be economical and time-saving, but not wanting to waste any of that precious sap! Loved this article and can’t wait to read more from you….now just to find the time!

In reply to Ken. I would definitely pass on the 2-wk-old sap. If it had been all frozen the whole time that would be fine, but otherwise I'd hate to see it ruin your syrup.

I have sap that I left in a bucket outside from a warmup two weeks ago that we then went into a deep freeze. It is probably 85% still frozen. The question is, do you think it would still be good or should I throw out the whole 5 gallons? This is my first year making maple syrup and Wednesday will be my second boil.
